Parmesan Tomato Slices
This was a spur-of-the-moment Pinterest attempt (read: I had a tomato I had to use STAT). I sliced the tomato thick, sprinkled on some garlic powder (I didn’t have any fresh garlic at the time, but that is recommended), generously added bread crumbs, sprinkled parmesan cheese, and then drizzled some olive oil, salt, and pepper on top of the whole shebang. The kids can help with everything except the slicing.
I tossed them in to the oven at 425 for 10 minutes. Delicious!
I prefer fried green tomatoes, but absent any green tomatoes, this will definitely do!
